Lemon Caper Chicken

I wish I had read the recipe closer before starting it. I would have discovered that it called for asparagus. I substituted portabella mushroom slices but I really don't like using all mushrooms with chicken because of the brown/gray color you get in the finished product. I did notice at the end of the recipe that substituting mushrooms is one of the suggestions.
Anyway, it turned out rather well. I put in too much chicken so there wasn't enough sauce but it tasted very good. I had not realized how strong capers taste. I had my boyfriend, the foodie, over for dinner and he liked it a lot.
The leftovers... well... ew. The sauce congealed and got gray, the chicken got soggy. They tasted good but looked yucky.
All in all, I'll give this recipe one more try with asparagus and without mushrooms.
