Cast Iron Love
Jul. 28th, 2009 01:16 pmI do most of my cooking with my cast iron pans. I have three skillets of various sized, a tea kettle, and a dutch oven that has been in my family for 60 years. As my Dad says, a properly seasoned cast iron skillet is what teflon is trying to imitate.
I made beignets for dessert at the D&D game Saturday. I cooked dinner out of my Creole cookbook so beignets were the perfect ending. I fry them in my biggest cast iron skillet which saves the room of a deep frier which I wouldn't use very much. I really only have three things I do that require that sort of frying; beignets, herbed fritters, and fried sage leaves.
