Jamaican Chicken with Black Beans

littleweedsI made Jamaican Chicken with Black Beans for dinner last night since I though my husband would like it.
Somehow it was spicier than I thought it was going to be and I wasn't in the mood for that much heat. It was really good though and fresh cilantro for the garnish added a nice taste touch. The only reason I had fresh cilantro is that I wasn't paying attention the last time I was grocery shopping and bought it instead of flat leaf parsley.
My 3 year old daughter ate a few beans and some of the chicken. She was having a cranky evening or I think she would have eaten more of it.
I'm not sure what I'm going to cook for dinner tonight. My husband is home again but the only options I have left on the menu for this week are vegetarian. I'll probably do an asian stew since I have to use the bok choy soon.
